Healthy 4th of July food options
The one thing I think of when I think about the Fourth of July is freedom, fireworks, bar b que, and watermelon. That is what we do in the South. As we head into the holiday today, I couldn't help but to think about some healthier ideas for a BBQ or get together. I came across quite a few that I will using today as we are out celebrating because I am always looking for ways to make things healthier!

Ingredients:
4tbsp olive oil
2 cloves garlic, chopped
1 lemon zest and juicce
2 tbsp chopped flat-leaf parsley
1 tbsp chopped rosemary
1 tsp chopped fresh thyme
1 tsp stevia
3/4 sea salt
1/4 tsp black pepper
1 1/4 lbs thick-cut boneless pork chops, cut into 1 inch pieces
2 medium zuchini, cut into 1/2 inch slices
2 medium summer squash, cut into 1/2 inch slices
12 cherry tomatoes

In a small bowl, whisk oil, garlic and lemon zest and juice. Stir in parsley, rosemary, thyme, sugar, 1/2 teaspoon of the salt and all the pepper.

Place pork in a large resealable food-storage bag and spoon in 4 tablespoons of the herb-oil mixture. Place zucchini, squash and tomatoes in another large resealable bag; pour the rest of the herb-oil mixture into it. Seal both bags and shake to coat ingredients. Refrigerate for 1 hour, turning after 30 minutes.

Heat a gas grill to medium-high or prepare a charcoal grill with medium-hot coals.

Thread metal skewers separately with pork, zucchini, squash and tomatoes. Grill zucchini and squash about 5 minutes per side, pork about 3 minutes per side or until internal temperature reads 155 degree F on an instant-read thermometer. Grill tomatoes about 3 minutes per side.

To serve, sprinkle kabobs with remaining 1/4 teaspoon salt.
Patriotic Fruit Kabobs
This one is pretty idea is just so cute and patriotic! I love it! I can't wait to show this one to my family later this afternoon!
Yogurt Pops:
Ingredients:
Blueberry yogurt
vanilla yogurt
strawberry yogurt
A handful of blueberries for each one
A handful of strawberries for each one.
Drop into a Popsicle mold and let freeze for one hour. These are almost to cute to eat!

1 cup cubed watermelon
